Ingredients (Makes two)
2 burrito size tortilla
1 can of diced tomatoes (we used diced tomatoes and garlic)
1/2 a cup of mozzarella cheese
2 Tablespoons of onions
1 Tablespoon of oregano
1 teaspoon of garlic powder
a handful of spinach
pepperoni to taste
a smattering of black olives
1. Preheat oven to 400 F.
2. Lay out tortilla on a baking sheet and cover in spinach (this makes a nice barrier for the tomatoes, but you certainly don't have to do it)
2. Layer on the rest of the ingredients.
3. Cook in the oven until the cheese is beginning to brown. The tortilla should be deliciously crunchy! Slice and enjoy!
