Loaded Baked Potato Soup for under $15!

Prepare for a chef take over on the blog! Today, we bring you a recipe we found for Loaded Baked Potato Soup for under $15 if you don't count tax, but if you do, it's over $15, which doesn't quite have the same ring to it! We also made it quasi-healthy (haha).

Step 1: Marry a great boy.
This one works great!
Step 2: Get up at 6:45 AM to go grocery shopping because it's finals week and there's nothing left in the apartment and you're tired of microwaveable frozen dinners!

Step 3: Shop while hungry, thus giving you the idea to make loaded baked potato soup because it's cold outside!

Step 4: Buy the ingredients...
5 baked potatoes ($4.71)
1 large onion ($.98)
1 quart fat free reduced sodium chicken broth ($1.88)
1/4 cup butter (hmmm... I didn't add in this cost. Eh, we'll call it negligible)
2 1/2 teaspoons salt (same goes for this. Though we did buy some salt today for 50 cents!)
1 teaspoon pepper
1 1/2 cups fat free half-and-half ($1.39)
1 cup shredded 2% sharp Cheddar cheese ($2.00 for the bag)
10 slices Turkey bacon ($3.50)

Step 5: Get the cute boy from #1 to fry the bacon from step 4 while you peel potatoes and cut them up.
All 10 slices in one pan... very impressive!
Step 6: Mix it all together (we left out some cheese and bacon to add to the potato soup later...) and let sit in the crock pot for 6 or so hours!

Step 7: Serve, garnish, enjoy!
The best part is that we still have at least 4 more bowls worth of potato soup! We're figuring we will get about 5 meals total out of the soup, and at less than $15 (see caveat above about the tax thing haha) that's a pretty sweet deal!

My finals end in exactly 6 days and then you'll be hearing from us a lot more! I've been scheming up some pretty sweet blog post ideas too! Thanks for reading!

  1. Catherine,

If you and Derek "cook" as well with your finals as what you described here with the soup, I think you'll both be able to say that "it's been a very good year".
